The Best Damn Instant Pot Phở Gà Recipe {Chicken Phở}

There are numerous friends of mine who have requested that I post this recipe for Phở Gà (Chicken Pho!). Finally, tonight, I sat myself down and hammered it out for you all so that you, too, can share in its awesomeness.

The reasons I love this recipe:

  1. You can make it for a group of people.
  2. It’s EASY to make (and fun!).
  3. It only takes 45 mins to an hour to cook (Thank you Instant Pot!).

By the way: This recipe makes about 4 HUGE Ramen bowls full of Pho broth.

So without further ado, here is the recipe.

Tools:

Instant Pot (Or Pressure Cooker)

Knife (and cutting board)

Sieve (for separating the contents from the broth)

For Pho Broth:

1 Yellow Onion (Quartered)

2 Inch Piece of Ginger Root (Roughly Chopped)

3 Cardamom pods (Lightly Crushed)

1 Cinnamon Stick

1 TBSP Coriander Seeds

3 Star Anise Pods

1 TSP Fennel Seeds

8 Cups Water

1 Bundle Cilantro

3 TBS Fish Sauce

1 TBS Sugar (I Use Raw Sugar)

1 Fuji Apple (Cut In Half)

Chicken (Your choice of chicken — boneless or not)

For Pho Toppings/Noodles:

1 Bag Vermicelli Rice Noodles (or glass rice noodles)

1 Bunch Green Onion

1 Bunch Cilantro

1 Bag Bean Sprouts

Fresh Basil Leaves

1 Yellow Onion

Hoisin Sauce (Optional)

Sriracha Sauce (Optional)

Instructions For Making Pho Ga:

Quarter 1 Yellow Onion and roughly chop the Ginger Root

When Pressure Cooker reaches Hot, put in 1 TBS Olive Oil

Turn off Saute Function (Cancel Button)

Cook the broth on Manual Mode (general pressure cook function) for at least 20–30 mins (or longer if desired!)

Natural Release for about 10–15 mins.

When done (pressure completely released), remove the lid and set aside

Remove chicken if possible and set aside

Strain contents (separate the broth into a pot)- I usually put a sieve on a cooking pot and pour the contents from the Instant Pot through the sieve into the cooking pot.

If there is chicken left in the contents (now in the sieve) remove and set aside with the rest of the chicken.

Toss the remaining contents in the trash.

Put the pot (now containing the broth) on the stove and heat until it’s lightly bubbling.

Preparing the Bowl of Pho (and Toppings!):

Follow the instructions to cook the bag of noodles. (strain them in a colander with cool water so they don’t continue to cook after they’re done)

Slice the other yellow onion

Chop the cilantro and green onion

Lastly, enjoy. You just made Pho, and it tastes amazing!
Turn on some Netflix and relax with your lovely bowl of Pho. ❤
